Meet Kerry Ann Gray.

Kerry was born and raised in Jamaica, and now residing in Saint Louis, Missouri. She’s a proud Jamaican who loves to turn up the heat in the kitchen.
Kerry was introduced to this Vegan lifestyle by Francesca Dawson. At first, she had no clue what veganism was all about. Kerry started off with the no meat challenge, then Francesca  introduced her to the vegan lifestyle. “I was like yeah, why not give it a try.” Kerry still was consuming eggs and dairy thinking that it was ok since it wasn’t meat. Later, Kerry fully  understood the concept of veganism, and ditched the dairy, eggs and fully transitioned into a vegan lifestyle.
Kerry now cook all kind of yumminess adding her Jamaican flavor and twist to every one of her dishes. “Can I tell you how much I love CURRY? I would seriously curry the air we breathe if I could. Not to mention Plantains and Avocados. They are a must in my dishes.”
Kerry own the copyright to the name Garden Belly and working on a Jamaican Vegan Cook Book to be released in the near future.
She take great pride in all of her dishes, and is  always happy to post and share with the world.

Spicy Oil-free  Coconut Mango Curry Chickpeas Recipe

served on a bed of:

• Steamed Brown Rice.
•Avocado.
•Tomato.
Spicy Coconut Mango Curry Chickpeas.
•1Half Ripe Mango cut into cubes.
•1Tomato.
•½ Red, Yellow &Green bell peppers
•1 Can Garbanzo Beans.
•1 Cup Coconut Milk.
•1Tsp Cajun Seasoning.
•1Tsp Badia Complete Seasoning.
• 1Tbsp Grace Hot Curry Powder.
•½ Tsp Cayenne Pepper.
•2 Cloves Galic.
•½ Chopped Onion.
•3 Sprigs of thyme.
•½ Tsp Fresh Grated Ginger.
•2 Stalks of Green onion.
Directions:
Set burner to #3.
•Once Cast Iron/ Frying Pan is ready.
•Add dry spices to the pan, stirring well for a few mins.
•Turn Stove up to#8
• Add The fresh Ginger, Garlic,  Onion, Thyme, and Chickpeas and mango combining well.
•Add ½ Cup of coconut milk and ½cup of water and stir.
• Let it simmer for 5 mins.
• Turn the stove back down to #5
• Add Bell peppers, Green onion, and more dry spices if needed.
•Add another ½ Cup of Coconut Milk and let it simmer on low for a few more mins and you’re done.
